Hyperspective is (or at least was) doing work with Unity.
Hey Sam, That's pretty cool that HPU has a course that teaches game development. UH Manoa has some courses in game development, but they happen very rarely.
At this point I think HAMA probably has the most up to date list, but you could also try ask IGDA Honolulu.

I'm trying to include interviews with game developers in the class. So far I have lots from the mainland US, Canada, Europe and a couple of Hawaii base d independents, but I'd love to get more Hawaii games companies involved

Yes I would think that there are more freelancers, and only a few companies based there. Based on the code jamm last year there is a lot of interest in gaming in Hawaii. Also the Hawaii Flash User Group is focusing more on Gaming now too.
I am trying to apply the game conference I am setting up in Honolulu on June 1st, trying to get the word out.

There are a lot of independents, but very few mid- to large-sized firms. Tried to find the five tracked by the state a couple of years ago:
