It's a PEBCAK, not a Win7 Problem.
Looks like a simple case of not plugging in the touch-screen controller. IT girl cheated by using a mouse; and the touch-screen demo that the cameras cut over to was of another person wearing a solid-white long sleeve.

Given this vibe surrounding Windows 7, it would be interesting to see a substantial investment into open source windows alternatives, like KDE..
